We all know one of the most painful things about being an adult is deciding what to have for dinner every night, then we have the added bonus of fussy children. Sometimes we just want to chuck something together, get it over and done with, with minimal mess, dishes and fights!
Here are seven quick, easy dinner recipes that will be enjoyed by the whole family!
One-Pan Baked Chicken and Vegetables: Place chicken breasts, chopped vegetables (such as carrots, potatoes, and onions), and seasonings in a baking dish. Bake in the oven for 30-40 minutes until the chicken is cooked through and the vegetables are tender.
Spaghetti with Meatballs: Cook spaghetti according to package instructions. In a separate bowl, mix ground beef, breadcrumbs, egg, and seasonings to form meatballs. Brown the meatballs in a skillet, then add tomato sauce and simmer until the meatballs are cooked through. Serve over the spaghetti. You could add your favourite vegetables into the sauce, or serve with a salad.
Tacos: Cook ground beef or shredded chicken in a skillet with taco seasoning. Serve in taco shells with shredded cheese, lettuce, diced tomatoes, and sour cream. We add carrots, cucumbers, beetroot, red onions and avocado too!
Grilled Cheese Sandwiches and Tomato Soup:Spread butter on bread slices and top with cheese. Cook in a skillet until the cheese is melted and the bread is toasted. Serve with canned tomato soup. We love this as a cheeky afternoon snack, or a starter for a simple dinner.
BBQ Pulled Pork Sandwiches: Place a pork shoulder in a slow cooker with BBQ sauce, and whatever herbs and spices you like and cook on low for 8 hours. Shred the pork, serve on hamburger buns with coleslaw and maybe a sneaky side of homemade wedges.
Fried Rice: Cook rice according to package instructions. In a separate skillet, cook diced vegetables (such as carrots, peas, and onions) and scrambled eggs. Add the cooked rice and soy sauce to the skillet and stir until well combined. This can be enjoyed alongside some stir fry or even using leftover meat shredded through.
Baked Potato Bar: Bake potatoes in the oven until tender. Set out toppings such as shredded cheese, bacon bits, chopped scallions, sour cream, and butter. Add any other toppings you desire! Let everyone build their own loaded baked potato.
